Savory Pork

Ingredients

½ cup Brown sugar 1 cup Italian parsley ¾ cup Thyme 5 Cloves Garlic ½ tsp truffle salt ½ tsp pepper ½ lemon ½ lime ½ cup olive oil ½ stick butter 1 Yellow Onion 10 small multi-color potatoes or potatoes or small red potatoes 1 package Lean Pork

Steps

1) In a food processor put brown sugar, ½ cup Italian parsley, thyme, garlic, truffle salt, pepper, lemon and lime, this is what goes on top of your pork on each side

2) Boil potatoes in water until you can stick a fork through them, then drain and place potatoes on a baking pan, take the back of a spoon and smash each potatoes once (reference picture), pour olive oil or butter mixed with the rest of the parsley over potatoes and bake at 400 degrees for 10-15 minutes

3) Place olive oil in pan or grill pan and cook pork about 3 minutes each side, I like all my meat extremely well done so mine are cooked a lot longer

4) Cut yellow onion up into thick slices and place in a pan with ½ stick of butter, you will need to cook these onions for a while you want them caramelized this means almost brown, if you need to add more butter throughout cooking them you can, cook on medium to low heat until caramelized

5) I used a balsamic glaze for the bottom of my plate which you can purchase at any local grocery store, however you can use anything you would like such as olive oil or even your favorite BBQ sauce, place the pork on top of this and place the caramelized onions on top of the pork, add potatoes and TADA

This recipe to me is very rustic and savory, the brown sugar and thyme on the pork reminds me of those fall days that are soon to come! Fall happens to be my favorite time of year so throughout my recipes you will find I tend to use fall flavors such as nutmeg, and brown sugar. Even though it is 95 degrees here in Florida beginning of August I am still looking forward to those fall months, this recipe is just one that gracefully covers the term comfort food.
