Save Me Some Salmon Beurre Blanc

Ingredients

2 lemons 1 cup white wine 1 Shallot 1 stick butter cut into small cubes and kept in refrigerator till making sauce ½ cup vinegar 3 Tbs fresh Dill 3 cloves of Garlic 2 pieces of salmon (I used a bourbon salmon because it was on sale)

Steps

1) Bake salmon at 400 degrees in the oven till golden brown on top, I like mine well done so I bake mine for 20 minutes and finish the top by putting the oven on broil so it’s nice and crispy

2) In a bowl squeeze two lemons, before squeezing both lemons zest one of the lemons, add dill stir and set aside

3) In a pan on medium head put shallots, chopped garlic, white wine and vinegar for 5-8 minutes until the liquid is evaporated a little

4) Add cubes of butter from the fridge to the pan on low heat one by one whisking in each cube

5) After butter is melted add lemon and dill mixture on low heat and when you stir you should be able to see the bottom of the pan ( This is MY version of Beurre Blanc sauce)

6) Make vegetable of choice to go with your salmon as an option, I used butternut squash and green beans you can use anything or nothing

7) Once salmon is done pour beurre blanc dill sauce over salmon on your plate, the salmon should be done before the sauce so the sauce will be last

This was a last minute recipe, I am not a chef by any means and I have no trained cooking skills I have learned everything from my parents and grandparents growing up and cooking in the kitchen, if I want to learn how to make a sauce I look it up and fine tune the recipe and directions to my own likening. I was hesitant to call this sauce a Beurre Blanc sauce because this original sauce is French and made by trained chefs, I didn’t want to disrespect the name of the sauce by not doing it by the book or not respecting the way it “should” be made, however my recipes are small tid bits of all recipes I was taught or I read from another chefs blog along the way I should be able to use some professional words without being criticized.. Right? The salmon I bought at the store literally is bourbon salmon on sale, I am a mom who loves making homemade meals every night for my husband however I also respect money and if something good like salmon is on sale because they already have it in a marinade, I am going to make it work, and it did work, it tasted delicious the same as if I just bought two pieces of regular unmarinated salmon for double the price that day. I loved making this recipe and I loved eating this recipe the sauce was delicious!
