Pleasantly peachy summer salad

Ingredients

Bag of salad or one head of Lettuce to chop up your own salad 1 container of Goat Cheese 1 cup sour cream 3 avocados 3 Tomatoes 2-3 Lemons 3 peaches 1 shallot 3 tsp apple cider vinegar ½ cup parmesan cheese 1 package thin sliced chicken breast

Steps

1) Cut the three tomatoes, 1 avocado, and the shallot, mix with 2-3 squeezed lemons, and apple cider vinegar, add salt and pepper to taste, set aside

2) Slice peaches in half, drizzle olive oil on the pulp part of each peach, use a grill pan or grill outside and place peaches pulp side down, around 5 minutes look to see if the peaches have grill marks, once they do its time to take them off, I moved my peaches in two different directions to get the criss crossed grill marks

3) While the grill pan is still hot use it to grill your chicken breast, I used lemon juice and chili powder on mine you can use whatever spices you enjoy

4) With the two remained avocados put them in a food blender with the sour cream and half of the goat cheese, use lemon juice to determine how thick or thin you would like your dressing

5) You can use the parmesan cheese as a garnish on top of the salad or I put a handful of parmesan cheese on a baking pan in a circle and baked it at 350 until golden brown and used the parmesan chip as a garnish

6) When setting up salad place lettuce first, top with dressing, add tomatoes and avocado mixture in the middle, top that with the parmesan chip, place chicken and grilled peaches around the tomato avocado mixture, ENJOY
